Colache is made of three specific ingredients: squash, corn and tomatoes. It must be these three items, just as succotash must be corn and Lima beans, and incidentally both are Cherokee words and the ingredients are indigenous to North America. Colache is derived from the "three sisters" method of farming: it is possible to grow corn squash and tomatoes on the same plot of soil as the corn will trellis the tomatoes and the squash will mulch the corn.
