bolting

A plant’s production of seeds before it can be harvested. Generally, it means that a plant (such as broccoli, cilantro, basil, cabbage, and lettuce) slows it’s normal leaf growth and starts producing more flowers and seeds. It usually occurs during high heat, which signals the plant that it is time to start producing seeds instead of leaves.
